. Hot Italian Sausage Soup .

I love soup 🥣 on rainy depressing days. It has been raining for two days straight and I have an abundance of kale in my garden so I made soup. Over quarantine I started making these cooking videos on my stories on Facebook and instagram. when I started getting around 500 views a day and people started asking me to sell platters I figured it was time to come back to mom lawn and start publishing my cooking videos. My tiktok does not really get much attention as my Facebook but here is my tiktok. Ingredients:

  • 1/2 LB Hot Italian sausage – split the casings and remove the sausage (throw away the casings)
  • Tablespoon of extra virgin olive 🫒 oil
  • Jarred roasted red pepper 🫑 – chopped
  • 2 Celery stalks – chopped
  • 1/2 large onion 🧅 -chopped
  • 4 garlic 🧄 cloves – minced or grated
  • potato 🥔 – peeled and cubed
  • 1/2 bunch of kale 🥬 – trimmed of stem
  • 6 cups of chicken stock (or chicken broth)
  • 1- 14.5 ounce can of diced tomatoes 🍅 (or you can chop a tomato)
  • Salt 🧂 and pepper to taste
  • 1 Teaspoon of dried Italian seasoning

Directions:

  • Heat olive oil in a pan/dutch oven if you have one, over medium heat
  • Break the sausages up into pieces and cook until browned
  • Remove from pan and set aside.

Next:

  • Take a paper towel and soak up some of the olive oil. (leave some in there)
  • sauté onions and celery (about five minutes)
  • Add roasted red peppers to the pan
  • Add garlic cook for one minute

Then:

  • Move everything into a pot and add back the sausage
  • Add the tomato
  • Add 6 cups of chicken stock or broth
  • Add Italian seasoning / salt and pepper to taste
  • Bring to a boil
  • Reduce to a simmer for about 10 minutes

Lastly:

  • Add potatoes and Kale 🥬
  • Bring to a boil again
  • Reduce to a simmer and cook for another 10 minutes
  • Serve hot- I like to put shredded parmigiano reggiano cheese on top with garlic bread on the side 😋
